  1. 1.In a saucepan, reduce the cider, vanilla bean, and cinnamon sticks by ⅓ .
  2. 2.Bring the reduced apple cider and sugar to a boil to dissolve the sugar.
  3. 3.Strain and chill until cold.
  4. 4.Place the cider mixture and brandy in a blender. With the blender on low speed, sprinkle in the xanthan gum then blend on high speed for 2 minutes.
  5. 5.Remove the bubbles in the sauce using a vacuum packaging machine.
