Prep Method 6

  1. 1.In a saucepan, bring the water and sugar to a boil. Add the blackberries and simmer on low heat until they break down.
  2. 2.Set aside the cooked blackberries and allow to infuse for 30 minutes, then strain through a fine-mesh strainer.
  3. 3.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water. Drain and gently melt with 2 tablespoons of the strained blackberry syrup.
  4. 4.Whisk the melted gelatin, blackberry syrup, puree, and juice to combine.
  5. 5.Measure and adjust the °Brix between 15°-20° depending on the sweetness of the blackberries and your taste.
  6. 6.Pour into a shallow pan and begin to freeze, stirring every 15 minutes.
