- 1.In a saucepan, bring the cream to a boil.
- 2.Pour the hot cream over the chocolate. Allow to stand for 5 minutes, then emulsify until smooth.
- 3.Make an amber caramel with the sugar and water.
- 4.Whisk the butter and vanilla bean seeds into the caramel until emulsified.
- 5.Stir the puffed rice into the caramel until evenly coated. Evenly spread the caramelized puffed rice onto parchment paper to avoid clumping.
- 6.Allow to cool, then coarsely chop.
