Prep Method 6

  1. 1.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water.
  2. 2.Grind the sugar and zest together in a food processor until well ground.
  3. 3.In a saucepan, whisk the lemon zest sugar into the water and heat to185°F (85°C).
  4. 4.Stir in the bloomed gelatin to dissolve.
  5. 5.Chill to room temperature. Once cool, strain through a fine-mesh strainer and whisk in the juice.
  6. 6.Pour into a shallow pan and begin to freeze, stirring every 15 minutes.
