Prep Method 6

  1. 1.Bring the water to a boil; pour it over the rosebuds and cover. Set aside to infuse for 12 hours, then strain through a fine-mesh strainer pressing on the rose buds to extract all of the liquid. Rescale the liquid to the original weight with more water as necessary.
  2. 2.In a saucepan large enough to accommodate the entire recipe, combine the rose infusion and cream. With an immersion blender, blend in the milk powder, dextrose, and glucose to dissolve.
  3. 3.Heat until warm, 105°F (40°C); whisk in the sugar that has been blended with the stabilizer.
  4. 4.Stir with a whisk and heat to 185°F (85°C).
  5. 5.Chill immediately and allow to mature for 6 to 12 hours.
  6. 6.Blend with an immersion blender before spinning.
