- Add oil slowly.
- Mix to full gluten development.
- Divide.
- Shape into ball.
- Lightly oil ball.

Usable life of dough is determined by:
- Storage temperature.
- Yeast %
At about 0.3% yeast (baker’s %) at refrigeration temperatures (< 39 °F), this dough is usable between about 48 hr and 192 hr.
