Process #
- Cream the butter and sugar until well combined.
- Add the eggs and then the molasses.
- Add the dry ingredients and mix until well incorporated.
- Scale into 2 lb 3 oz (1000 g) pieces and roll into 17 in (43 cm) logs (sheet pan width).
- Wrap each log in parchment, and refrigerate until ready to bake.
- Cut to the desired size [2 oz (50 g) to 4 oz (100 g)], place on parchment-lined sheet pans, and bake at 350 °F in a convection oven for 12 to 15 min.
