Process #

  1. Chill meat to 32 °F.
  2. Hand mix salt, meat.
  3. Chill for 1 hr.
  4. Combine all but ice.
  5. Food processor emulsify until temp climbs to 45 °F.
  6. Add ice.
  7. Repeat until well emulsified.
  8. Optionally:
  9. Line sheet pan aluminum foil.
  10. Form meat into loaf 2 in thick.
  11. Bake ≈30 min at 300 °F until 155 °F internal.
