- Sift together flour, salt, baking powder, and sugar.
- Combine egg, water, milk powder, and oil.
- Add the liquid mixture to the dry mixture.
- Mix until just combined.
- Cook 2 oz batter portions on a 375 °F griddle.
Notes #
- 135% water yields a somewhat thin batter.
- For buttermilk pancakes and waffles, use buttermilk instead of milk.
- Reduce baking powder to 3.00% and add 0.75 tsp (3 g) baking soda.
- If the batter is too thick, thin with milk or water as needed, up to 50%.
