Process #

  1. Sift together flour, salt, baking powder, and sugar.
  2. Combine egg, water, milk powder, and oil.
  3. Add the liquid mixture to the dry mixture.
  4. Mix until just combined.
  5. Cook 2 oz batter portions on a 375 °F griddle.

Notes #

  • 135% water yields a somewhat thin batter.
  • For buttermilk pancakes and waffles, use buttermilk instead of milk.
  • Reduce baking powder to 3.00% and add 0.75 tsp (3 g) baking soda.
  • If the batter is too thick, thin with milk or water as needed, up to 50%.
