Prep Method 7

  1. 1.Grind the dehydrated garlic to a fine, even powder if it is coarse or granulated.
  2. 2.Thoroughly combine the garlic, Parmesan, and salt.
  3. 3.Warm the butter-flavored shortening and butter-flavored oil together to 45–50 °C (113–122 °F), stirring just until the shortening is fully melted.
  4. 4.While whisking or blending continuously, gradually add the dry mixture to the warm fat. Continue mixing until no clumps remain.
  5. 5.Let stand for 10 minutes to bloom the dehydrated garlic, stirring once or twice to keep the solids suspended.
  6. 6.Stir in the parsley. Keep the blend warm enough to remain fluid and stir immediately before use.
  7. 7.Brush a thin, even layer onto the crust immediately after the pizza leaves the oven.
