- 1.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water.
- 2.In a saucepan large enough to accommodate the entire recipe, bring the cream, water, sugars, and glucose to a boil.
- 3.Whisk in the cocoa powder and salt and return to a boil.
- 4.Off the heat, add the bloomed and drained gelatin.
- 5.Blend the glaze with an immersion blender until homogenous.
- 6.Strain through a fine-mesh strainer and refrigerate overnight.
- 7.Use at about 84°F (29°C).
