Prep Method 8
- 1.Combine the whole wheat flour, toasted oats, and water in a bowl and soak for 30 minutes.
- 2.In a mixer fitted with a paddle attachment, combine all of the ingredients - except the walnuts and mix for 2 minutes on low speed. Increase to medium speed and mix for 3-4 minutes to develop gluten.
- 3.Add the walnuts and mix on low speed until combined.
- 4.Place the dough in an oiled bowl and bulk proof for 60 minutes.
- 5.Turn, fold and flip the dough over in the bowl, cover and refrigerate overnight, or up to 18 hours.
- 6.Divide in ½ and pre-shape into 2 rounds. Cover and bench rest for 10 minutes.
- 7.Shape into bâtards, roll in oats, and place into buttered loaf pans. Proof for about 60 minutes, or until doubled in size.
- 8.Bake at 375°F (191°C) for 35-40 minutes, or until baked through.
