  1. 1.Butter the pullman pan and lid.
  2. 2.In a mixer fitted with a paddle attachment, mix all of the ingredients on low speed for 1-2 minutes to hydrate.
  3. 3.Switch to a hook attachment and mix on medium-low speed for 3-5 minutes, or until gluten is developed.
  4. 4.Place the dough in an oiled bowl and bulk proof for 30-60 minutes, or until doubled in size.
  5. 5.De-gas the dough, then shape into a loaf the length of the pullman pan.
  6. 6.Place the loaf in the buttered pan seam side down and slide the lid closed.
  7. 7.Give the dough its final proof. The dough should rise within a ½-inch to the lid before baking.
  8. 8.Bake at 350ºF (177ºC) for 25-30 minutes, or until golden brown.
  9. 9.Remove the lid and continue to bake until the internal temperature is 190ºF (88ºC), about 15 minutes.
  10. 10.Unmold the loaf immediately after baking and cool on wire racks.
