Prep Method 6
- 1.In a saucepan large enough to accommodate the entire recipe, whisk ⅔ of the dextrose into the cold water, then using an immersion blender, blend until smooth.
- 2.Combine the remaining dextrose with the stabilizer, salt, and pepper.
- 3.Heat the mixture until warm, 105°F (40°C); whisk in the remaining dextrose that has been blended with the stabilizer, salt, and pepper.
- 4.Stir with a whisk and heat to 185°F (85°C).
- 5.Chill immediately. Once cool, add the juice and Worcestershire sauce and allow to mature for 6 to 12 hours.
- 6.Blend with an immersion blender before spinning.
