- 1.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water.
- 2.In a saucepan large enough to accommodate the entire recipe, bring the milk, glucose, and salt to a boil.
- 3.Off the heat, add the chocolates, followed by the bloomed and drained gelatin.
- 4.Blend the glaze with an immersion blender until homogenous.
- 5.Strain through a fine-mesh strainer.
- 6.Use at about 84°F (29°C).
