  1. 1.Add the water and light corn syrup to a saucepan.
  2. 2.Heat the mixture to 60–70 °C (140–158 °F), stirring continuously.
  3. 3.Gradually add the sugar and stir until completely dissolved.
  4. 4.Add the molasses and salt; stir until evenly incorporated.
  5. 5.Heat the syrup to 80–85 °C (176–185 °F) without bringing it to a hard boil; avoid excess evaporation, which will raise the Brix.
  6. 6.Remove the saucepan from the heat. Cool the syrup below 70 °C (158 °F), then stir in the maple flavor, vanilla extract, and optional caramel color.
  7. 7.Cool a sample to the refractometer calibration temperature, then measure the soluble solids.
  8. 8.Adjust to 66.5–67.0 °Brix: add small, measured amounts of water if the reading is high, or gently heat the syrup to evaporate water if the reading is low.
  9. 9.Cool the syrup, transfer it to a clean bottle, and refrigerate.
