Prep Method 13
- 1.Combine the sugar and water in a saucepan.
- 2.Heat gently while stirring until the sugar is completely dissolved and the syrup is clear. Do not intentionally boil down or cook to a candy stage.
- 3.Stir in the light corn syrup.
- 4.Cool the syrup to approximately 41 °C (105 °F).
- 5.Stir in the citric acid and salt until dissolved.
- 6.Continue cooling the syrup to 29–32 °C (85–90 °F).
- 7.Bring the shortening to approximately 20–22 °C (68–72 °F), so it is soft and plastic rather than melted.
- 8.Combine the shortening and liquid lecithin in a stand mixer bowl. Mix with the paddle attachment on low speed for about 1 minute until homogeneous.
- 9.With the mixer running on low speed, gradually add the syrup in 6–8 additions over approximately 5 minutes. Let each addition incorporate before adding more.
- 10.Stop the mixer and scrape the bowl 2–3 times during incorporation. If the mixture becomes glossy, greasy, or unusually loose, stop mixing and chill the bowl briefly before continuing. Do not whip at high speed.
- 11.Add the lemon extract or bakery emulsion and vanilla extract.
- 12.Mix with the paddle on low speed for another 30–60 seconds, only until smooth and uniform.
- 13.Let the creme stand until it reaches the desired spreading consistency. Chill briefly if needed.
