Prep Method 5
- 1.In a mixer fitted with a paddle attachment, mix the flour, salt, sugar, and butter until the butter is ¼-inch, or "pea sized."
- 2.Combine the ice water and vinegar and add ½ the liquid to the dry ingredients and mix for 10 seconds on low speed to hydrate.
- 3.Add the remaining liquid and mix until the dough is shaggy but holds together when pressed between two fingers.
- 4.Turn the dough out onto a lightly floured work surface. Gently shape into desired sized rounds.
- 5.Wrap the dough in plastic wrap and refrigerate for a minimum of 1 hour, preferably overnight.
