  1. 1.In a mixer fitted with a paddle attachment, mix the flour, salt, sugar, and butter until the butter is ¼-inch, or "pea sized."
  2. 2.Combine the ice water and vinegar and add ½ the liquid to the dry ingredients and mix for 10 seconds on low speed to hydrate.
  3. 3.Add the remaining liquid and mix until the dough is shaggy but holds together when pressed between two fingers.
  4. 4.Turn the dough out onto a lightly floured work surface. Gently shape into desired sized rounds.
  5. 5.Wrap the dough in plastic wrap and refrigerate for a minimum of 1 hour, preferably overnight.
