Prep Method 9
Almond Milk:
- 1.Toast the almonds. Allow to cool, then pulse in a food processor until finely ground.
- 2.In a saucepan, bring the water, milk, sugar, salt, and ground almonds to a boil. Set aside to steep until cool, then refrigerate overnight.
- 3.Strain the mixture through a fine-mesh strainer, pressing against the almonds to extract as much almond milk as possible.
Almond Milk Mousse:
- 4.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water.
- 5.Whip the cream to soft peaks and set aside.
- 6.Warm the almond milk to 110°F (43°C).
- 7.Melt the bloomed and drained gelatin with the amaretto and whisk into the warmed almond milk. Cool to about 65°F (18°C), or until slightly thickened.
- 8.Make a Swiss meringue with the egg whites and sugar; whip until tepid.
- 9.Fold the cooled milk/gelatin mixture into the meringue, followed by the whipped cream.
