Brioche Ice Cream

Brioche Milk:
- 1.Place the toasted brioche in a saucepan with the milk. Bring to a scald and set aside to infuse for 1 hour.
- 2.Strain the infused milk through a fine-mesh strainer, pressing the soaked brioche to extract as much of the liquid as possible.
Brioche Ice Cream:
- 3.In a saucepan large enough to accommodate the entire recipe, combine the brioche milk, butter, milk powder, and salt. Blend with an immersion blender to dissolve.
- 4.Heat until warm, 105°F (40°C).
- 5.Meanwhile, whisk together the egg yolks and the first weight of granulated sugar until light. Add the yolk mixture and invert sugar to the warm milk mixture.
- 6.Combine the second weight of sugar with the stabilizer and whisk into the warm milk mixture.
- 7.Stir with a whisk and heat to 185°F (85°C).
- 8.Chill immediately and allow to mature for 6 to 12 hours.
- 9.Blend with an immersion blender before spinning.
