  1. Brioche Milk:

  2. 1.Place the toasted brioche in a saucepan with the milk. Bring to a scald and set aside to infuse for 1 hour.
  3. 2.Strain the infused milk through a fine-mesh strainer, pressing the soaked brioche to extract as much of the liquid as possible.
  4. Brioche Ice Cream:

  5. 3.In a saucepan large enough to accommodate the entire recipe, combine the brioche milk, butter, milk powder, and salt. Blend with an immersion blender to dissolve.
  6. 4.Heat until warm, 105°F (40°C).
  7. 5.Meanwhile, whisk together the egg yolks and the first weight of granulated sugar until light. Add the yolk mixture and invert sugar to the warm milk mixture.
  8. 6.Combine the second weight of sugar with the stabilizer and whisk into the warm milk mixture.
  9. 7.Stir with a whisk and heat to 185°F (85°C).
  10. 8.Chill immediately and allow to mature for 6 to 12 hours.
  11. 9.Blend with an immersion blender before spinning.
