  1. 1.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water.
  2. 2.Whip the cream to soft peaks and set aside.
  3. 3.Whisk the pastry and chestnut creams together with the salt until smooth.
  4. 4.Melt the bloomed and drained gelatin with the simple syrup, then combine with the alcohol. Whisk the melted gelatin mixture into the chestnut mixture until smooth.
  5. 5.Make a Swiss meringue with the egg whites and sugar.
  6. 6.Fold the meringue into the chestnut mixture, followed by the whipped cream.
