  1. 1.Melt the chocolate and set aside.
  2. 2.In a saucepan, bring the cream, milk, and vanilla bean to a boil.
  3. 3.Stir in the melted chocolate and bring the mixture to a scald.
  4. 4.In a mixing bowl, whisk together the egg yolks, sugar, and salt.
  5. 5.Temper the hot chocolate cream into the egg yolk mixture until smooth and homogenous.
  6. 6.Strain through a fine-mesh strainer.
  7. 7.Remove excess air bubbles from the top of the crème brûlée custard by placing a piece of plastic wrap or paper towel on the surface and then removing.
  8. 8.Bake at 275°F (135°C) in a water bath, covered, until the custard trembles slightly when shaken.
