  1. 1.In a mixer fitted with a paddle attachment, mix the flours, sugar, baking powder, salt, and butter until the butter is ¼-inch, or "pea sized."
  2. 2.Add the cream and mix just until a dough is formed; do not over mix.
  3. 3.Wrap the dough in plastic wrap and refrigerate for a minimum of 1 hour, preferably overnight.
  4. 4.Roll the dough to about ¼-inch thick and cut out desired sized discs with a cookie cutter.
  5. 5.Overlap the discs on top of your favorite prepared fruit filling to make a "cobblestone" look.
  6. 6.Bake at 350ºF (177ºC) until golden brown.
