Prep Method 8

  1. 1.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water.
  2. 2.In a saucepan, heat the water, honey, lavender, extract, vanilla bean, and salt to 140°F (60°C), then add the bloomed and drained gelatin.
  3. 3.Strain the liquid before adding to the sugar to remove the lavender particles and vanilla pod.
  4. 4.Sift the sugar into a bowl. Add the strained liquid and stir until there are no lumps.
  5. 5.Add the food coloring and some additional lavender flowers to taste.
  6. 6.Cover with plastic wrap and let cool to room temperature before use.
  7. 7.Reheat if the glaze gets too thick.
  8. 8.Try this glaze in the summer with our yeast doughnuts on page 492.
