Prep Method 8
- 1.Bloom the gelatin in cold water; the gelatin will absorb the majority of the water.
- 2.In a saucepan, heat the water, honey, lavender, extract, vanilla bean, and salt to 140°F (60°C), then add the bloomed and drained gelatin.
- 3.Strain the liquid before adding to the sugar to remove the lavender particles and vanilla pod.
- 4.Sift the sugar into a bowl. Add the strained liquid and stir until there are no lumps.
- 5.Add the food coloring and some additional lavender flowers to taste.
- 6.Cover with plastic wrap and let cool to room temperature before use.
- 7.Reheat if the glaze gets too thick.
