- 1.Whip the cream to soft peaks and set aside in the refrigerator.
- 2.Whisk the rum, egg yolks, sugars, and salt over a water bath until thickened and a ribbon is achieved.
- 3.Whisk the sabayon over an ice bath until cold.
- 4.Fold the whipped cream into the sabayon.
