Prep Method 10
- 1.In a mixer fitted with a hook attachment, mix the water and yeast for 30 seconds.
- 2.Add the sifted dry ingredients and mix until fully incorporated.
- 3.Add the butter and mix on low speed for 5 minutes.
- 4.Increase the speed to medium-low and mix for another 5 minutes.
- 5.Place the dough in an oiled bowl and bulk proof until doubled in size.
- 6.De-gas the dough and roll or sheet to ½-inch thick.
- 7.Cut into the doughnuts using a doughnut cutter or use two sizes of round cutters to create the hole.
- 8.Proof the doughnuts until doubled in size.
- 9.Add enough oil to a deep-sided pan to measure the depth of about 3-inches. Over medium heat, bring the temperature of the oil to 375°F (191°C).
- 10.Carefully add a few doughnuts to the oil, being careful not to crowd the pan. Fry until golden brown. Turn the doughnuts over and fry until the other side is golden. Drain on paper towels.
