- 1.Sift together the flour, baking soda, salt, cinnamon, and sugar. Place the sifted dry ingredients in a large bowl and make a well in the center.
- 2.Place the strawberries with their juice, beaten eggs, oil, and optional pecans in the well. Stir until all ingredients are moistened.
- 3.Divide the batter between two 9-by-5-inch loaf pans that have been well greased and floured; the bread tends to stick if the pans are not properly prepared.
- 4.Bake at 350°F for 60 to 70 minutes, testing for doneness after 60 minutes.
- 5.Cool in the pans for about 30 minutes before turning the loaves onto a cooling rack.
