- 1.In a saucepan, bring the milk, cream, sugars, salt, and vanilla bean to a boil.
- 2.Meanwhile, whisk the whole eggs and yolks together until smooth.
- 3.Temper ½ of the hot milk mixture into the egg mixture. Use a rubber spatula to scrape all of the tempered egg mixture back into the saucepan. Strain through a fine-mesh strainer.
- 4.Puree the bananas and rum in a blender until smooth. Whisk the puree into the custard.
- 5.Bake at 300°F (149°C), covered, just until set.
