Caramel:
- 1.In a saucepan, bring the butter and cream to a boil and set aside.
- 2.In a separate saucepan, bring the sugar and water to a boil. Add the glucose and cook to a deep amber caramel.
- 3.Deglaze with the melted butter/cream mixture and emulsify until smooth.
Custard:
- 4.In a saucepan, bring the caramel and cream to a boil.
- 5.Whisk the whole eggs, yolks, and salt. Temper with the caramel/cream mixture.
- 6.Remove excess air bubbles from the top of the custard by placing a piece of plastic wrap or paper towel on the surface and then removing.
- 7.Bake at 200°F (93ºC) in blind baked tart shells just until set.
