  1. 1.Make beurre noisette with the butter. Strain through a fine-mesh strainer and set aside to cool.
  2. 2.Make a ganache with the cream and chocolate and set aside.
  3. 3.In a mixer fitted with a paddle attachment, combine the sifted dry ingredients.
  4. 4.Mix the egg whites into the dry ingredients in 3 additions on low speed, scraping down the bowl as necessary.
  5. 5.Add the beurre noisette in 3 additions.
  6. 6.Add the ganache and mix until incorporated.
  7. 7.Chill until firm.
  8. 8.Bake at 350°F (177ºC) until the cake springs back to the touch and a skewer inserted comes out clean.
