Prep Method 8
- 1.In a saucepan, bring the water, milk, butter, sugar, and salt to a boil.
- 2.Remove the pan from the heat and stir in the sifted flour all at once.
- 3.Place the pan back on medium heat and cook the paste to dry it out, stirring continuously for 2-3 minutes. A thin film will form on the bottom and the paste will pull away from the pan.
- 4.Transfer the dough to a mixer fitted with a paddle attachment and beat to release the steam. Allow the mixture to cool enough so as to not cook the eggs when added.
- 5.Slowly add the eggs, scraping down the bowl as necessary.
- 6.Transfer the dough to a piping bag fitted with a large star tip.
- 7.Add oil to a deep-sided pan. Over medium heat, bring the temperature of the oil to 360°F (182°C).
- 8.Carefully pipe the dough into the oil, cutting with a hot knife or metal spatula in 6-inch lengths, being careful not to crowd the pan. Fry until golden brown and cooked through to the center. Drain on paper towels, then toss the churros in plain or cinnamon sugar as desired.
