Prep Method 7

  1. 1.Combine the dry ingredients and reserve.
  2. 2.Cream the butter and sugars.
  3. 3.Add the eggs and vanilla, then the peanut butter.
  4. 4.Add the dry ingredients and mix until well incorporated.
  5. 5.Scale into 1000 g pieces and roll into 17 in logs (sheet pan width).
  6. 6.Wrap each log in parchment, and refrigerate until ready to bake.
  7. 7.Cut to the desired size [2 oz (50 g) to 4 oz (100 g)], place on parchment-lined sheet pans, and bake at 350 °F (177 °C) in a convection oven for 12 to 15 min.
