Prep Method 15
Doughnut:
- 1.Gently reduce the apple cider by 75% to 120 g (4.2 oz). Set aside to cool.
- 2.Sift the dry ingredients and set aside.
- 3.In a mixer fitted with a paddle attachment, cream the butter and sugar until smooth and aerated.
- 4.Add the eggs one at a time, scraping down the bowl as necessary.
- 5.Gradually add the reduced apple cider and the buttermilk, mixing until combined.
- 6.Add the dry ingredients and mix just until the dough comes together.
- 7.Dust a parchment-lined sheet pan with flour and turn the dough out onto the pan. Flour the top of the dough and pat it down until it is ½-inch thick. Use more flour if the dough is sticky.
- 8.Transfer the dough to the freezer until firm (about 30 minutes).
- 9.Cut into the doughnuts using a doughnut cutter or use two sizes of round cutters to create the hole.
- 10.Refrigerate for 30 minutes.
- 11.Add enough oil to a deep-sided pan to measure the depth of about 3-inches. Over medium heat, bring the temperature of the oil to 360°F (182°C).
- 12.Carefully add a few doughnuts to the oil, being careful not to crowd the pan. Fry until golden brown. Turn the doughnuts over and fry until the other side is golden. Drain on paper towels.
Glaze:
- 13.Sift the powdered sugar, cinnamon, and salt.
- 14.Whisk the cider and brandy into the powdered sugar mixture until smooth.
- 15.The old fashioned way of glazing doughnuts is to dip them by hand. The trick is to have the glaze thick enough to coat the doughnut in one application. If either the glaze or the doughnuts are too warm, the glaze will run off.
