  1. 1.Sift the dry ingredients.
  2. 2.Cut in the butter until it is well mixed into the dry ingredients.
  3. 3.Add the currants.
  4. 4.Whisk the buttermilk, egg, and zest and mix into the dry ingredients just to moisten.
  5. 5.Shape into 2 balls and cut a broad X on the top of each ball approximately 1-1½-inch deep.
  6. 6.Bake immediately at 350°F (177ºC) until nicely browned (about 25-30 minutes).
